I've found that for engineering employment, UF carries that prestige within Florida, and maybe in neighboring states.

But engineering managers don't track sports all that closely, and the population of engineers from FL are pretty low at employers spread farther out across the country.

Thus few outside FL have solid data on which to rate UF grads or UCF grads. My experience is that most of them couldn't tell you the difference between UF and UCF any more than Floridians could tell you the difference between UC Santa Barbara, UC Santa Cruz, and UC Irvine.
