There is no such thing as proof except in math. There is only evidence.

We all look at the evidence and form our conclusions. Some of them are more rock-solid than others.

Often (always?) they are colored by personal bias. Open-mindedness is the trait of going against personal biases when the weight of evidence is strong.

On the flip side, there must be a term for rationalizing personal bias in the face of strong evidence to the contrary? Example: believing in Creationism.
