I have high cholesterol and watching how our meat gets from mass produced misery to packaged combined with the health detriments means it's time for some baby steps. I'm looking for meatless dinners that teenagers and wife will actually eat. I can do cheese pizzas and pasta as the easy ones but actual meals beyond that would be appreciated.

Most of the plant-based fake meats I've tried give me the raging shits; haven't found much I like in the true vegetarian department. I'm trying to eat more sashimi and ceviche; no argument with either except for the cost of good fish.

Interesting insights...
- High triglycerides are as important to track & fix as high LDL (bad) cholesterol

- "Bad" (LDL) cholesterol is often estimated/calculated rather than measured, and can sometimes give a misleading result. For a brief discussion, see the Friedewald Equation section here. (Johns Hopkins)

- There are advanced lipid particle tests available, and they may convey more useful info than the generic lipid panel. LDL particle size and apolipoprotein B might be of interest to your doc in terms of quantifying heart/atherosclerosis risk. One data point here. (National Lipid Association)

- You can try Red Yeast Rice supplements in place of statins (cholesterol-lowering Rx drugs), with some caveats. Overview here. (Mayo Clinic)
One major caveat is that you don't know exactly what you're getting in OTC supplements. I went to an Rx statin for that reason; my doc reduced the dose because it was working too well, and I had read some scary anecdotes about memory loss.

- There are genetic tests available that may help identify the optimal statin drug for you. See this one from Duke: Genotype Informed Statin Therapy.

I've always wanted to be a vegetarian. The problem is I don't like that many vegetables. Beans and rice everyday will remind me of camping in C.R..

Much appreciated. I would love to do fish. I was buying salmon from costco for a while, and then I saw Seaspiracy. I will eat what I can catch but thats not reliable or regular.

Bounce around to the vegan and vegetarian restaurants and see what you like. Then recreate your own version at home. Heck even just reading their menus will give you some good ideas. Go to the Green Room in cocoa beach and get the "Bendalong" your tongue will beat your brains out without a piece of meat insight.

Two I like and use: Anna Thomas and Mollie Katzen. My 2 cents, don't go crazy with it. Chicken every other day, fish too. Save beef or pork for special occasions. My Dr wanted me to go on statins 20 years ago. I did this instead. It works. Have fun.

Watch out for the nutrition on some of the meat alternative commercial stuff, I've learned that just because it's "plant based" doesn't always equal healthy.

We have been on and off vegetarians, but at this point moderation seems the best strategy to me. Indian dishes are some of my favorite, like channa masalla.

And anything Mexican can be made with black beans or mashed pinto. For summer grilling, cut onions and peppers in big chunks/quarters, toss in olive oil with big mushrooms, and throw them on. Good stuff.
