By red fish, do you mean Snapper?  or Pargo? or Huachinango?

Don't know much about fish except they're tasty.  I have an agreement with them.  I don't pull them out of their habitat, if the don't drag me down to theirs

If you ever go to the Osa in Costa, there's a town called Puerto Jimenez.  We stayed at the Agua Luna that had a restaurant attacked.  I ordered the fish.  The waiter took a rod, tossed a line over the side and caught my dinner.  Can't get fresher than that.

We pull into the town about dusk and stopped at the first soda. we sat near the road to watch our crap. no one was on the street when we arrived and by the time we got our food, there was a crowd standing in the street staring at us. Los Chicos de Maize.

we left and got the room at Agua Luna.  the bathroom had a giant window that filled the wall and no curtains.  the next morning we found out it was because A L was on a mangrove.  Anyone brave enough to be a peeping Juan, deserved a look.

Puerto Jimenez was like the frontier. we were at a bar and cops were standing in the door kinda giving us stink eye. I asked a man if we should worry and he pointed to a guy I thought was standing in the back of the bar. "They won't come in as long as HE'S here" . the guy was sitting and when he stood up he kept going up. He was ten Ticos stacked on top of each other. The man said the cops used to torment him as a child. He couldn't find any shoes after he turned 13. El Gigante knew we were talking about him so he started towards the door to prove he's king and the puercos disapeared. I looked at his feet and it was like he was wearing swim fins. I bought him drinks all night.
