I've been thinking about getting a shirt that says "Powered by Gluten" on the back to wear during races.

I read a study in which the researchers actually provided all of the meals to the subjects in the study and blinded the subjects to the presence or absence of gluten in their diets. The actual presence/absence of gluten had no effect. But the subjects that thought that they were eating gluten reported the usual "gluten sensitive" symptoms even when they weren't getting any gluten and those that thought they weren't eating gluten reported good feeling.

All the actual science I can find says that "non-celiac gluten sensitivity" is in people's heads and that when people go gluten free and see some measured improvement it is probably due to some other confounding variable; like maybe they started eating more fruits and vegetables and less starch-carbs.

I will vouche that lots of carbs and not enough fat and vegetables backup my system. Bulk fiber and starch without fruits and fats to slicken up the works is bad. Just fixing for people that were chronic junk fooders probably makes them feel better. Then again, replace the snake cake with Doritos and the 6pack a day beer habit with hard cider and you probably won't get a good result.

But people love their fads and Power Balance Bracelets made millions before they were exposed as a sham and there was the Q-Ray before them.

People love to be made to feel good and empowered without actually having to think hard about things. That's why charlatans like Dr. Oz make a killing.

Note the difference between this situation and the one with global warming. Here, they tested a hypothesis and got real and definitive results. With global warming, they formed a hypothesis and jiggered models and data to come up with the desired results. So, with the global warming business you have two areas that can lead to errors. The pro-global warming bias and the models, which real world measurments are showing to be defective.

Maybe if you're not exercising much (when it's flat) eat more veggies and less carbs. Use good oils (non-hydrogenated)and stay away from foods that use canola oil. Eat only non-gmo (without round-up and other crap) carbs. Farro is a good wheat which you can mix with many foods or have it with your favorite dish.
If you are making breads or other foods use non-gmo sprouted flour.

Many people don't know that mono and di-glycerides are typically hydrogenated oils due to high heats when processed. These are considered additives by the FDA so this hydrogenated oil is not added to the total amount of trans fat on a label. And, I believe labels don't need to state the amount of trans fat unless it's .5 mg or higher.
