Mrs. Dingpatch rocks it when she makes gravlax. BUT, what really puts it over the top is to use a good raw sugar and Redmond salt. Beats the poop out of using regular Kosher salt and white sugar.

I'm a bit of a wild salmon junkie myself and really don't care for the farm raised fish.  So I'm curious where you or Mrs. Dingpatch go for your Atlantic Salmon?

Each spring I get whole wild caught Alaskan sockeye fillets shipped from a place called Vital Choice.  They're the best I've had other than the ones I catch myself.  Healthier too.  Try them once and you'll never go back to farm raised.

There's no doubt sustainable fisheries are becoming scarse with an ever increasing human population, but farmed salmon - and farmed fish ingeneral - has its own environmental impacts, health concerns and risk to native fish populations that can't be ignored.

In terms of taste there's no doubt wild line-caught salmon is best.  It's also better for you and is one the most sustainable fisheries left on the planet. We just have to protect headwater rivers and support net bans, including farming nets.
