My wife and I have all kinds of salts in our kitchen. And I've been trying different sea salts in the smoker. Using Bay and Pecan wood.

The very best so far has been this light grey Celtic. It is yummy, but it is fairly "wet" and would need to be dried out prior to using in a "salt shaker".
