If you have not eaten at both shrines to BBQ in Lockhart TX .... you should not be allowed to offer an opinion on what is "good" BBQ!!!

Thats a very taunting thing to say here on the East Coast.............lol There is lots of great BBQ out there........but Lockhardt, well, its a whole 'nother level...... |

My personal preference for the best bbq is eastern NC style w/ hot vinegar sauce - THE BEST. I find that other regions tend to goop it up w/ thick sauce. I admit I haven't tried this Texas joint - so I'd be curious - but I am afraid I might be disappointed having lived in eastern NC so long. |

My personal preference for the best bbq is eastern NC style w/ hot vinegar sauce - THE BEST. I find that other regions tend to goop it up w/ thick sauce. I admit I haven't tried this Texas joint - so I'd be curious - but I am afraid I might be disappointed having lived in eastern NC so long. In my back yard...my dad ran the Old Hickory in Lexington N.C. when I was a kid. If I'm no good at anything else, I can produce BBQ. Lots of references to prove it. |

have found redemption in a variety of other styles. As a true believer, it is an article of faith that the best bbq is still out there, in some greasy, smokey dump, on the side of a side road, with a dirt lot full of trucks and NO INTERNET. jes sayin' The truth is out there. I want to believe. |

Hot jerked island style is my favorite. That Texas stuff is for old women and children. |

Its out there on the side of the road in the Redlands down south - Folks serve it out of a 55 gal barrel pit, a crusty brisket or pork shoulder, on a paper plate and some homeade sauce on the side.
Same all over Texas, Louisiana,Arkansas,etc........ Like Texas High School football however, it is elevated to a culinary art- whether in an air conditioned sitdown restaurant or a smoker pit on the side of the road. Seek, and ye shall be rewarded! |

We ate at a place in MS near the Pearl River
where their claim to fame was "smoke cooked meat". The bbq rig was, as it should be, an amazing homebuilt contraption with a great big wood burner topped with ducting that went up then down, "no flame can get thru there!" says the proud owner/builder, to convey smoke and heat to the "oven"(?). Awsome Q. My Dad tells me the Dept of Health closed them down for recycling the unfinished glasses of icetea and various other offenses, but we had no ill effects. |

MS, home of "The Shed". Their BBQ was delish but what was really really good was the potato salad. I believe they fried the potatoes and then used sourcream instead of mayo alone, so it was a creamy consistency with crunchy bites mixed in. So good.

Bubba's at the Frisco Woods Campground in NC is a tradition of course
but not all that good a bbq IMHO. "Bubba" was from the DC area. However, on the road south from Norfok to Nags Head there was a town called Coinjock NC. Coinjock's claim to fame was that it had the drawbridge over the intercoastal where 158 crossed and there on the side of the "highway" was an old house in which the town ladies ran a bbq that I think was called Porkys. Smoker out back, sit down tables and chairs in the old dining and living room with church ladies bringing you supper and ice tea. AWESOME. They even had a bear cub that would come begging around back named "Little Boy" or "Little Man" depending on who you asked. When the construction of the new highway bridge west of town was completed and the drawbridge retired, so did Porkeys and probably the town as well.
