Happens a lot. A couple months ago I was fishing at Inlet when some Dolt casted out his mullet and a Pelican dive bombed and grabbed it out of the air. He immediately pulled out his pocket knife and cut the line....with about 50 feet of mono and leader hanging. Doomed that bird most likely.
Can't tell Bobby but is there any mono hanging off that?
If not, that leader will probably soon rust off and the bird will be okay.

For educational purposes (I really cant see this happening to me as I hardly ever go fishing), what should one do if a bird start flying away with your lure/bait in its mouth/stomach?

Some pretty good advice here:
Help a hooked bird

Note..
re instruction #2- No such thing as a "Seagull" & besides, that's a Royal Tern

re instruction #4- Pelicans breathe through their mouth-if nostrils were open, they'd drown or do lung damage when diving at high speeds (they dive open-mouthed but they can close their throat just like we do)

Here's the deal.
As bad as it sounds, reel in the bird. Have a jacket or your shirt or anything to cover the bird with because
it will obviously be freaking out. Cover the guy, it will relax. DO NOT TRY TO REMOVE THE HOOK!!
Simply cut the line as close to the beak or wherever it's hooked and let it go.
In almost every case, the hook will rust or work loose. However, a long leader of fishing line is a death sentence.

They were here long before we were.
