When Matthew hit, I had frozen food packed in an ice chest to try to save it from spoiling. The seafood defrosted, so rather than lose it, I made ceviche. Four small lobster tails and a mangrove snapper filet. Cut seafood into small bite sizes. Place in bowl and salt well. Float seafood in lime juice until covered. Lime is a bit less tart than lemon juice for my taste. Add half cup of orange juice. Refrigerate one hour. Dice small sweet tri-color peppers, onion and cilantro. Set aside. Peel and seed one cucumber. Set aside. One small can of Rotel seasoned crushed tomatoes. Go with mild for first time, it's still has a little kick. Mix peppers, onion, cilantro, cuke and Rotel well. Drain excess lime/orange juice from seafood. Mix drained seafood with other chopped veggies. Refrigerate one more hour. Serve with Captain's wafers and your favorite hot sauce. Enjoy. Never served it without raves, even from first timers.
